If you use Mail.app as your email client on your Mac, you know that when you press reply on an email message, it quotes the whole thing. This is useful, but may not always be the best way.
If you want to quote a specific section of that email specifically, it's easy.
How to do it:
With the original email open, simply use your keyboard or mouse and select the text you want quoted. Next, click on the REPLY button.
A new email message will open up and it will include the text that you selected.
This is really handy when you want to bring attention to one thing, instead of quoting the whole message.
